Sudachi fruit is a speciality of Japan’s Tokushima region, where it is commonly used instead of lemon. The small round green fruit looks similar to a lime, and has a fragrant sharp flavour.
The citric tang of this 100% sudachi juice works in sweet and savoury recipes. Make a marinade for grilled fish, or flavour tofu and vegetables. Use it in place of lime in a cheesecake, or to flavour coconut macaroons. It also works well in sake cocktails. The citrus juice cures raw fish, so try it in a salad of fresh tuna and greens.
This sudachi juice is produced by a co-operative press in the Tokushima region. The sudachi is harvested at the end of summer for maximum flavour.
