The dark soy in this set is sweetened with wasanboon sugar. The traditional Japanese sugar takes 20 days to make. Sugarcane is harvested, pressed, then boiled, skimmed, dried, rinsed, and ground into distinctive fine grain. Use the sweet soy sauce to season salmon or roasted meat.
