You’ll find many uses for the Essential Cuisine lamb glace:
- Dilute with water – 25g per litre – to make up a lamb stock for a richer tasting broth
- Intensify flavours in braises and stews: stir a teaspoon into the sauce for braised lamb shanks, or a Lancashire hotpot
- Intensify flavours in sauces & salads: stir a little lamb glace together with freshly chopped mint and hollandaise sauce to serve with grilled lamb cutlets, or use as a dressing for a warm lamb salad
- Brush the lamb glace onto lamb chops just before serving for a richly flavoured and deeply coloured glaze
